Nicky’s style coronation chicken saladKirstin Sham
Not sure what to have for lunch, tired of just grabbing something unhealthy because you have no time and feeling unsatisfied after lunch? Maybe it’s time to try something different. This twist on coronation chicken is super easy and absolutely delicious!
All you need are just a few simple ingredients:
- 2 x chicken breasts
- 50 ml Nicky’s Preserves Curry Mayo
- 6 x dried apricots
- Handful plus a pinch for garnish shaved almonds
- 2 x handfuls Baby spinach
- Half a red pepper
- Chives for garnish
- 1x handful of Rocket
- ½ Tsp Cajun spice
- ½ Tsp chicken spice
- ¼ Tsp paprika
- 2 Tsp olive oil
- salt & pepper
Note: you can cook the chicken the night before and whip it together the next day.
Add two teaspoons of olive oil to the pan and heat up, add two chopped up chicken breast, ½ tsp Cajun spice, ½ tsp chicken spice, ¼ paprika, cook on high until chicken is nice and crispy.
In a large mixing bowl mix together 50ml of Nicky’s Preserves Curry Mayo, 6 chopped apricots, a handful of shaved almonds and some salt and pepper to taste.
Add in 2 handfuls of chopped baby spinach, half of a chopped red pepper, 1 handful of rocket and mix well.
For garnish, add some chopped chives and shaved almonds
Serves 2, so enjoy with a friend while social distancing 😉
